Paillard's, the hotel's signature restaurant, offers diners a range of dishes, from regional Southern cooking to New Orleans Cajun/Creole cuisine. Paillard's is open for breakfast, lunch and dinner. Reservations are not required.

Hours are: Breakfast: 6:30 am to 10:00 am Monday- Friday, 7:00 am to 11:00 am Saturday and Sunday. Lunch: 11:00 am to 2:00 pm Monday- Friday, 12:00 pm to 2:00 pm Saturday and Sunday. Dinner: 5:00 pm - 10:00 pm Sunday- Saturday.
